New Dining Option in Eagle!!

Opened 2 weeks ago at the corner of 5th Street and Highway 34.

I like this part of being the editor - announcing new businesses in our area and encouraging all of you to help them succeed. Karen and I have eaten lunch there twice, so here is our review. Wow! Most everything is made from scratch in a really small kitchen by a very talented chef. Sandy has a catering business and decided to give the restaurant gig a try. She and her family remodelled the former Corner Cafe building and have provided indoor and outdoor seating plus carry out. Different specials every day, plus a standard menu that is definitely above standard.

Okay - first visit loaded nachos - two cheeses, mildly spicy ground beef, tomatoes, pickled jalepenos, sour cream and beans over tortilla chips. Ole! Second visit, I had a deli roast beef sandwich on whole wheat with cheese, romaine lettuce, fresh tomato slices, and red onion, plus a dill pickle slice and French onion soup. Sandwich was excellent. Her French onion soup has moved to the top of my list, beating out Grandmother's version. Don't worry Sandy, I won't give away your secret other than to say there's more than one type of onion. Karen had a beef and bean burrito with chile verde, beans and rice, which will satisfy a much larger person. She opted for a take home box rather than share it with me.
